Refreshing Spicy Cucumber Coconut Water Margarita

This Spicy Cucumber Coconut Water Margarita is so good. With a hint of mint and a good kick from the jalapeno, this cocktail is packed with flavor. The cucumber and coconut water give it a refreshing taste, with a bright, tartness from the lime. When I was drinking this, I offered Steve a taste, saying immediately, “You probably won’t like it though”, since he usually does not care for cucumber or coconut water. But he took a taste and was blown away. We both agreed this tastes like a fancy margarita you would easily pay $16 for at a high-end restaurant. We loved it so much, that Steve already requested them again tonight.

I have been concocting a version of this cocktail in my mind for several months now. Honestly, probably since that first warm breeze of spring blew in a couple of months back. I knew that I wanted it to be light and refreshing with cucumber and coconut water, maybe slightly spicy with a couple slices of jalapeno (Steve and I have been all about the spicy cocktails lately), and lightly sweetened with a hint of agave. But I never could put my finger on exactly what I had in mind.

So while I kept buying random ingredients with the intention of spending some time mixing something together, they somehow just kept getting used for other recipes. I never actually had everything on hand to whip one of these Spicy Cucumber Coconut Water Margaritas up when the mood hit.

That is until now, and honestly, since we are in the peak of summer season with several weeks now of 90°+ weather, I don’t think there could be a better time for these refreshing margaritas.

How Do You Make a Cucumber Coconut Water Margarita?

These margaritas include several ingredients, but don’t let that intimidate you. They take just a few minutes to mix up in a shaker, which is honestly the most amount of effort I want to put into mixing up a cocktail when it is this hot outside.

To make this Spicy Cucumber Coconut Water Margarita, you will need:

  • Cucumber Slices: You probably already have a couple of cucumbers sitting around in the back of your fridge, so slice up a couple of slices and toss them in the shaker. You don’t need to remove the skin or seeds (if the seeds are extra large an tough, you may want to use a spoon to scoop most out so they don’t get stuck in your shaker lid).
  • Mint: Because mint makes anything extra refreshing, and I have an abundance of fresh mint in my garden right now, toss a couple of leaves in.
  • Jalapeno Slices: I can’t get enough of the spicy cocktails right now (I’m looking at you Spicy Blood Orange Margaritas!), so I had to include a couple of slices of jalapeno. I keep the seeds in for an extra kick, but you can remove them if you don’t like the heat.
  • Silver Tequila: My favorite for any margarita cocktail, silver tequila is a must. You don’t need to use anything too top shelf, just a good middle of the line tequila is perfect.
  • Orange Liquor or Triple Sec: This is optional, but helps round out the flavors a bit.
  • Lime Juice: Freshly squeeze lime is essential in this Spicy Cucumber Coconut Water Margarita to bring a brightness to balance out the cucumber, tequila, and coconut.
  • Agave Syrup: I love using agave with tequila, as the flavors pair well, but you can substitute honey if desired. Just use more or less to taste, depending on how sweet you want it.
  • Coconut Water: Coconut water has a light, clean flavor that pairs nicely with the cucumber and lime for a refreshing cocktail. Plus, it is loaded with electrolytes and potassium, which we can all probably use more of in the hot summer months.

What is Coconut Water?

Coconut water is the clear liquid that comes from a young, green coconut. In addition to being naturally sweet and super hydrating, coconut water is loaded with several important nutrients, including electrolytes and minerals that many people don’t get enough of. Since it contains all of these electrolytes and minerals, coconut water is also great at curing or even preventing a hangover.

At a friend’s barbecue recently the topic came up about how coconut water is a not-so-secret cure for treating a hangover. One friend mentioned how she recently found herself asking all of her friends how they could drink several glasses of wine at every get-together, and then still get up at the crack of dawn to knock out a quick run. Their secret was that each of them was chugging a bottle of coconut water before going to bed.

While I have known to drink coconut water in the morning to cure a hangover after indulging in a few too many cocktails, I never considered drinking it at night before a hangover. So after a few laughs, and a couple more glasses of wine, we all decided that we would need to invest in several big bottles of coconut water before our next get together.

As I thought about it more, it hit me. Why not just mix the coconut water right into your cocktail so you can hydrate while you enjoy a couple of cocktails. Now that is genius! Ingredients

  • 4 slices cucumber
  • 4 mint leaves
  • 1 - 2 jalapeño slices (seeds removed if you want it less spicy)
  • 2 oz silver tequila
  • ½ oz orange liquor or triple sec
  • juice of ½ lime
  • 1 - 2 tsp agave syrup (substitute honey if desired)
  • coconut water
  • tajin or margarita salt (optional)

Instructions

  • Rim a glass with Tajin or margarita salt if desired.
  • Add the cucumber, mint, jalapeno slices, tequila, orange liquor, lime juice, and agave to a shaker. Muddle until well combined (you want to break up the cucumber, mint, and jalapeno without completely mashing it).
  • Add ice and shake well for 1 – 2 minutes.
  • Strain into rimmed glass over fresh ice. Top with chilled coconut water.
