Steve has unofficially declared this summer as the “Summer of Tequila”, and I can’t say I’m sorry about it. So obviously, we have spent the last several weeks mixing up lots of different fresh and fruity margarita and tequila cocktail recipes lately. From our favorite Easy Palomas by the Pitcher, to all sorts of fresh citrus juice margaritas, such as this Strawberry Blood Orange Margarita Pitcher, we have been embracing the tequila this summer.

One of our favorite margarita cocktail recipes we have mixed up so far happens to be this fresh Watermelon Mint Margarita. With fresh made watermelon juice, a squeeze of lime, and a splash of triple sec, these margaritas are fresh and juicy. With a couple of sprigs of mint (from my garden of course!) and topped off with a splash of club soda, these margaritas are quick to make and are a refreshing way to top off any sunny summer day.

Watermelon Mint Margarita Cocktail Recipe

We first had the idea to make fresh watermelon margaritas a few weeks back, in about the middle of May. I remember this distinctly, because trying to find a watermelon to make the fresh watermelon juice proved to be quite a feat. It all started when we woke up one Saturday and were talking about our plans for the day. Steve mentioned he had been craving watermelon and wondered if we could make some margaritas later that day. He talked me into it, so I headed to the store to find watermelon. Unfortunately, it really wasn’t watermelon season yet (we were about a week or two early), so all I could find was a sad, small overpriced watermelon. I bought it anyway, determined we would be drinking watermelon margaritas that day, and then got home only to find out it was way over ripe and almost rotten.

Later that day, we were at Sams for a couple of other things, and we ended up picking up another watermelon (again paying way more than a watermelon should cost, but at least this one was huge – like everything at Sams Club). By the time we got home, I was so frustrated with watermelons, I didn’t even want to look at it. Needless to say, we gave up on the idea of watermelon margaritas for that day.

But, now that it is the peak of watermelon season, and you can find big, juicy, ripe watermelons nearly everywhere you turn, these Watermelon Mint Margaritas are the perfect summer cocktail.

How Do You Make Watermelon Mint Margaritas?

The key to these refreshing Watermelon Mint Margaritas is the homemade watermelon juice. While it might sound like a lot of work, it is really quite simple to mix this up in your blender, you don’t even need a juicer or any other special equipment. You just need a fresh, ripe watermelon, your blender, and a mesh strainer to strain out any extra pulp (if desired).

To make the fresh watermelon juice for these Watermelon Mint Margaritas:

  • Chop up about 8 cups of fresh watermelon (we used about ¼ of a medium sized seedless watermelon).
  • Blend on high until it is completely blended.
  • If desired, pour through a fine mesh strainer to remove the extra thick pulp (if you don’t mind it pulpy, you can skip this step).
  • Refrigerate until ready to use – it should keep about 3 days. The juice may separate when sitting, so just give it a shake or stir before using.

This gave us about 1 liter of fresh, homemade watermelon juice.

Ingredients

Watermelon Mint Margarita Recipe

  • 5 large mint leaves (plus more for garnish)
  • 5 oz silver tequila
  • 2 oz triple sec
  • juice of ½ a lime
  • 6 oz watermelon juice (see recipe below)
  • 4 oz club soda
  • Salt for garnish (if desired)

Homemade Watermelon Juice

  • ¼ medium seedless watermelon cut into large cubes (about 8 cups)

Instructions

Watermelon Mint Margarita Recipe

  • In a cocktail shaker, add mint leaves. Muddle lightly with a muddler or the back of a spoon until lightly crushed.
  • Add tequila, triple sec, watermelon juice, lime juice, and a handful of ice, shake well.
  • Rim two glasses with margarita salt (if desired).
  • Strain divided between two glasses over ice, top with about 2 oz club soda per glass. Garnish with extra mint and lime wedges if desired.

Homemade Watermelon Juice

  • Add watermelon to blender, blend on high until it is completely blended.
  • If desired, pour through a fine mesh strainer to remove the extra thick pulp (if you don’t mind it pulpy, you can skip this step).
  • Refrigerate until ready to use - it should keep about 3 days. The juice may separate when sitting, so just give it a shake or stir before using.
