We have been really big on making tasty breakfasts lately. (If you are keeping count, 4 of my last 6 recipes have been perfect for breakfast or brunch.) From healthy protein packed breakfast recipes like this Healthy Apple Pie Smoothie or High Protein Chocolate Chip Peanut Butter Banana Bread Bars, to not so healthy (but totally delicious) recipes like these Easy Cinnamon Sticky Buns, we are leaning into breakfast hard in our house.

I love all of the new breakfast recipes I have been sharing, but I am honestly so excited to share this recipe with you today! Loaded with small chunks of apples, flakey, buttery croissants, warm cinnamon, and topped with a crunchy, buttery streusel crumb topping, this Apple French Toast Casserole Bake is the perfect combination of apple crisp meets french toast casserole. It is easy to make ahead, making it the perfect recipe for breakfast or brunch when you need to serve a crowd, but don’t want to spend a lot of time cooking in the morning.

Packed with all of the flavors of fall, I love this Apple French Toast Casserole Bake for a cool fall morning, but it would also be absolutely delicious during the holidays, when company visits, or for a New Year’s brunch.

How Do You Make Apple French Toast Casserole Bake?

This Baked Apple Crisp French Toast Casserole is an easy overnight breakfast. Just mix up the egg custard mixture, add in the apples and croissants, transfer to a 9 x 13 casserole dish, cover, and let everything sit overnight. You can even make up the streusel topping and refrigerate separately.

In the morning, let the casserole come to room temperature while the oven preheats, then bake for 25 minutes, top with the crumb topping, and bake an additional 20 – 25 minutes until set.

The best part of this Cinnamon Apple French Toast Bake is the streusel topping. It makes it extra special, adding a sweet crunch from the brown sugar, extra cinnamon and apple pie flavor, and hearty, bits of ground oats. I love the extra texture you get from using oat flour for the streusel topping, but you can also substitute regular flour if you prefer.

Serve with extra maple syrup, powdered sugar, or even whipped cream for an extra decadent treat.

Baked Apple French Toast Croissant Casserole for Fall Breakfast or Brunch

Apple French Toast Casserole

This Apple French Toast Casserole Bake is loaded with chunks of apple, buttery and soft croissants, and warm cinnamon spice, topped with a simple streusel oat topping. It combines all of the best flavors of fall, for the perfect overnight breakfast casserole.

Ingredients

  • 1 1/2 cup milk
  • 6 eggs
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1 1/2 tsp cinnamon
  • 2 large apples (about 3 cups chopped)
  • 8 large croissants (about 12 cups)

Cinnamon Oat Streusel Topping

  • 3/4 cup oat flour (see note)
  • 3/4 cup brown sugar
  • 1 tsp cinnamon
  • 1 1/2 tsp pie spice (apple or pumpkin pie spice)
  • 1/2 cup cold butter (cubed)

Instructions

  • Grease a 9 x 13 inch casserole dish.
  • Prepare croissants by tearing/cutting each croissant into large chunks (I cut each into about thirds). Set aside.
  • In a large bowl, whisk first 6 ingredients (everything but apples and croissants) to combine. Stir in apples and croissants. Transfer to prepared casserole dish, and cover tightly with foil.
  • Refrigerate overnight (or at least 2 hours), until egg custard is absorbed.
  • When ready to bake, preheat oven to 375. Remove casserole dish from refrigerator and let sit at room temperature while oven preheats.
  • Bake covered 25 minutes.
  • Remove casserole from oven and sprinkle topping evenly over top. Return to oven, and bake uncovered for an additional 20 - 25 minutes, until custard is set and top is golden brown and toasty.
  • Serve topped with extra syrup, powdered sugar, and/or whipped cream, if desired.

For the Cinnamon Oat Streusel Topping

  • Either while the casserole bakes or the night before, prepare the streusel topping by combining dry ingredients in a medium bowl. Add butter, and use a fork, pastry cutter to combine butter and dry ingredients into a crumble.
  • Refrigerate until ready to use.

Notes

To make the oat flour add oats to a food processor or blender, pulse until blended into a smooth flour-like consistency.
You can also substitute regular, all purpose flour if desired.
