Apple French Toast Casserole

This Apple French Toast Casserole Bake is loaded with chunks of apple, buttery and soft croissants, and warm cinnamon spice, topped with a simple streusel oat topping. It combines all of the best flavors of fall, for the perfect overnight breakfast casserole.

Ingredients

  • 1 1/2 cup milk
  • 6 eggs
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1 1/2 tsp cinnamon
  • 2 large apples (about 3 cups chopped)
  • 8 large croissants (about 12 cups)

Cinnamon Oat Streusel Topping

  • 3/4 cup oat flour (see note)
  • 3/4 cup brown sugar
  • 1 tsp cinnamon
  • 1 1/2 tsp pie spice (apple or pumpkin pie spice)
  • 1/2 cup cold butter (cubed)

Instructions

  • Grease a 9 x 13 inch casserole dish.
  • Prepare croissants by tearing/cutting each croissant into large chunks (I cut each into about thirds). Set aside.
  • In a large bowl, whisk first 6 ingredients (everything but apples and croissants) to combine. Stir in apples and croissants. Transfer to prepared casserole dish, and cover tightly with foil.
  • Refrigerate overnight (or at least 2 hours), until egg custard is absorbed.
  • When ready to bake, preheat oven to 375. Remove casserole dish from refrigerator and let sit at room temperature while oven preheats.
  • Bake covered 25 minutes.
  • Remove casserole from oven and sprinkle topping evenly over top. Return to oven, and bake uncovered for an additional 20 - 25 minutes, until custard is set and top is golden brown and toasty.
  • Serve topped with extra syrup, powdered sugar, and/or whipped cream, if desired.

For the Cinnamon Oat Streusel Topping

  • Either while the casserole bakes or the night before, prepare the streusel topping by combining dry ingredients in a medium bowl. Add butter, and use a fork, pastry cutter to combine butter and dry ingredients into a crumble.
  • Refrigerate until ready to use.

Notes

To make the oat flour add oats to a food processor or blender, pulse until blended into a smooth flour-like consistency.
You can also substitute regular, all purpose flour if desired.
