Why Do I Love This One Skillet Pork, Apples, and Sweet Potato Skillet?

I always love a one pan meal. Anything that cuts down on dishes and makes dinner easier to get on the table is a win in my book! But what I really love about this Pork Tenderloin with Apples and Sweet Potatoes is the combination of flavors. Apples and pork always play well together. The earthy thyme pairs with the sweetness from the apples. And the maple mustard sauce is the real star. It is similar to the Maple Mustard Glaze used on my Maple Mustard Salmon, Brussels Sprouts, & Sweet Potato Sheet Pan Dinner, another easy and healthy one pan dinner.

Made with both whole grain mustard and spicy brown mustard, this sauce has lots of mustardy flavor with little pops of texture from the mustard seeds. A splash of apple cider vinegar adds brightness and balances out the sweetness from the maple syrup.

This roasted pork tenderloin with apples and sweet potatoes is the perfect healthy and comforting meal for a chilly fall evening.

How Do You Make Pork Tenderloin with Apples, Sweet Potatoes, Thyme, and Maple Mustard Sauce?

This Roasted Maple Mustard Pork Tenderloin is easy to make in just one skillet.

In an oven proof skillet, sear the seasoned pork until brown on each side. Then add the apples and vegetables, and season with thyme, salt and and pepper. Bake in preheated oven for 10 minutes, before stirring and adding the sauce. Spoon about half of the sauce over the pork and spread the rest around the apples and vegetables. Continue to bake until pork is cooked through to a temperature of 145° and vegetables are tender, about 15 – 20 additional minutes.

Rest the pork about 5 minutes, and slice to serve. Spoon any addition pan juices over pork when serving.

    Ingredients

    • 1 1/3 lb pork tenderloin
    • salt and pepper
    • lemon pepper
    • garlic powder
    • 1/2 lb sweet potatoes, about 1 large sweet potato or 2 medium (cut into 1/2 inch chunks)
    • 1/2 lb new potatoes (cut into 1/2 inch chunks)
    • 1 small onion (sliced)
    • 2 apples, honeycrisp or gala (sliced)
    • 1 clove garlic (minced)
    • 1 tbsp fresh thyme

    Maple Mustard Sauce

    • 4 tbsp pure maple syrup
    • 2 tbsp whole grain mustard
    • 1 tbsp spicy brown mustard
    • 2 tsp apple cider vinegar

    Instructions

    • Preheat oven to 400°
    • Season pork tenderloin with salt, pepper, garlic powder, and lemon pepper seasoning
    • In a large, oven proof skillet, add 1 tbsp olive oil. Sear pork over medium heat for 3 - 4 minutes per side, until lightly browned
    • Add sweet potatoes, potatoes, onion, apple, garlic, and thyme. Season vegetables with additional salt and pepper and drizzle with remaining 1 tbsp oil. Stir to coat evenly.
    • Transfer skillet to preheated oven, and bake 10 minutes
    • Spoon about half of the sauce over the pork and spread the rest around the apples and vegetables, stir to coat. Continue to bake until pork is cooked through to a temperature of 145° and vegetables are tender, about 15 - 20 additional minutes.
    • Rest the pork about 5 minutes, and slice to serve. Spoon any addition pan juices over pork when serving.
