These Watermelon Mint Margaritas are made with just a couple of simple ingredients, including fresh watermelon juice, lime, and a few sprigs of mint, making a light, fruity and refreshing summer cocktail that is perfect for sipping on hot summer afternoons or evenings on the patio.

Ingredients

Watermelon Mint Margarita Recipe

  • 5 large mint leaves (plus more for garnish)
  • 5 oz silver tequila
  • 2 oz triple sec
  • juice of ½ a lime
  • 6 oz watermelon juice (see recipe below)
  • 4 oz club soda
  • Salt for garnish (if desired)

Homemade Watermelon Juice

  • ¼ medium seedless watermelon cut into large cubes (about 8 cups)

Instructions

Watermelon Mint Margarita Recipe

  • In a cocktail shaker, add mint leaves. Muddle lightly with a muddler or the back of a spoon until lightly crushed.
  • Add tequila, triple sec, watermelon juice, lime juice, and a handful of ice, shake well.
  • Rim two glasses with margarita salt (if desired).
  • Strain divided between two glasses over ice, top with about 2 oz club soda per glass. Garnish with extra mint and lime wedges if desired.

Homemade Watermelon Juice

  • Add watermelon to blender, blend on high until it is completely blended.
  • If desired, pour through a fine mesh strainer to remove the extra thick pulp (if you don’t mind it pulpy, you can skip this step).
  • Refrigerate until ready to use - it should keep about 3 days. The juice may separate when sitting, so just give it a shake or stir before using.
