Watermelon Mint Margarita Recipe
In a cocktail shaker, add mint leaves. Muddle lightly with a muddler or the back of a spoon until lightly crushed.
Add tequila, triple sec, watermelon juice, lime juice, and a handful of ice, shake well.
Rim two glasses with margarita salt (if desired).
Strain divided between two glasses over ice, top with about 2 oz club soda per glass. Garnish with extra mint and lime wedges if desired.
Homemade Watermelon Juice
Add watermelon to blender, blend on high until it is completely blended.
If desired, pour through a fine mesh strainer to remove the extra thick pulp (if you don’t mind it pulpy, you can skip this step).
Refrigerate until ready to use - it should keep about 3 days. The juice may separate when sitting, so just give it a shake or stir before using.
