Watermelon Margarita Mimosas

Steve and I have been all about the margaritas this summer, but we also both love a good mimosa (or two!) with brunch. These Watermelon Margarita Mimosas bring the best of both worlds with sweet, fresh watermelon juice, tangy lime, and just a kiss of tequila, topped off with bubbly sparkling wine or champagne. It’s basically a margarita that you can drink for breakfast! And how can you go wrong with that?! Since these Watermelon Margarita Mimosas are so easy to make in a batch, these are the perfect mimosas when you are looking to serve a crowd for your next brunch party or get together. To make these Watermelon Margarita Mimosas, you first mix up what I like to think of as the watermelon margarita base, using the watermelon juice, tequila, lime juice, and triple sec. Once this is ready, just pour into glasses and top with sparkling wine to serve each mimosa. Basically, this batch cocktail allows your guests to easily serve themselves, so you don’t have to spend the day mixing up drinks.

How Do You Make Watermelon Margarita Mimosas?

Making these Watermelon Margarita Mimosas is really simple, you just need four ingredients, along with a couple of bottles of champagne or sparkling wine. To make these mimosas, you need:

  • Fresh Watermelon Juice: I make this myself by just blending up some fresh watermelon chunks in the blender and then straining the extra pulp. Get the recipe in my Watermelon Mint Margarita recipe. If you want to save time, you can sometimes find fresh watermelon juice at your local market or grocery store. I know the Fresh Thyme by me carries it by their juice bar in the summer months.
  • Triple Sec: To enhance that classic margarita flavor, I added just a splash of triple sec.
  • Lime Juice: Some fresh lime juice adds a little tang to help balance out the sweetness from the watermelon and mellow out the tequila.
  • Tequila: I prefer to use silver tequila here as it doesn’t over power the other ingredients. You don’t necessarily need to use top shelf tequila, since it is getting mixed with other ingredients, but whatever your favorite silver tequila is should do.
  • Sparkling Wine or Champagne: I like to serve these Watermelon Margarita Mimosas with a brut rose sparkling wine. The tartness of the sparkling wine balances out the sweet watermelon juice for the perfect finish. Plus ,that pink color helps enhance the bright watermelon red for a simply beautiful cocktail.

Ingredients

  • 2 cups watermelon juice (see note)
  • 2 oz triple sec
  • 2 oz lime juice
  • ¾ cup silver tequila
  • 2 bottles of brut rose sparkling wine

Instructions

  • In a 1 quart pitcher or mason jar, mix first three ingredients and stir. Refrigerate until ready to use.
  • To serve, fill champagne flute about 1/3 full with watermelon and tequila mixture, top with chilled champagne.
