This past Christmas, most of my gifts were related to cooking. I guess people really do know me, because I loved them all! Specifically, Steve got me two of the most adorable little cast iron skillets I have ever seen. The moment I saw the small 8 inch skillet, I knew I had to make a mini frittata for two. I love frittatas, but it is really only something I could make for company since I usually had to make such a big dish to fill my large cast iron pan – until now thanks to this Ham and Cheese Frittata for two!

This mini Ham and Cheese Frittata for Two is packed with flavor, loaded up with chopped ham, sautéed onions and peppers and melty white cheddar cheese. Pair it with some fresh fruit and maybe a mimosa or my favorite Sparkling Peach Sangria, and this is the perfect, quick and easy dish for your lazy weekend brunch.

What is a Frittata?

A frittata is basically a quiche without the crust (which ultimately makes it much easier and quicker to make). Frittatas are usually started in the skillet where the meat and veggies are sautéed. Then after the eggs are added, the skillet is moved to the oven to finish baking. One of the main benefits of a frittata is that you don’t need to dirty a lot of dishes. Also, while it finishes baking in the oven, I love that you have a few minutes to prep the rest of your meal, so it is great for an easy breakfast, brunch, or even quick weeknight dinner paired with a salad.

Frittatas are usually made in large batches (and large skillets), but this mini Ham and Cheese Frittata is a great scaled down version. It is great to serve two or if you are cooking for one, the leftovers reheat just as well in the microwave the next day.

Do I Need a Cast Iron Skillet to Make this Ham and Cheese Frittata?

While a cast iron skillet is not absolutely necessary to make this Ham and Cheese Frittata, a good small cast iron skillet does give the best result as it holds heat well and cooks evenly. You could also use any small ovenproof skillet. If you don’t have an oven safe skillet, any small casserole dish will work. You will just need to transfer the cooked ham and veggies to the dish along with the eggs. The size is important here though, because you don’t want the eggs to spread out too much, leaving you with a sad thin frittata. Make sure you use a dish that is about 6 inches across.

If you want to scale this recipe up for more servings, you can, but make sure you use the right size pan for your amount of ingredients. The eggs should sit about 1 1/2 inches deep when added with the rest of the ingredients.

What Other Ingredients Can I Use in a Frittata?

You can honestly make a frittata with nearly anything you have on hand. I made this Ham and Cheese Frittata for Easter Brunch, so adding some Easter ham seemed like a no brainer. But many other meat, cheese, and veggie combinations would be delicious. Here are some options that I recommend:

  • Sausage, swiss, spinach, and mushroom frittata
  • Bacon, kale, sweet potato, and cheddar frittata
  • Tomato, spinach, and mozzarella frittata
  • Asparagus, roasted red pepper, spinach, and feta frittata

Ham and Cheese Frittata for Two

Ingredients

  • 1 tbs butter
  • ¼ red onion diced
  • ¼ red bell pepper chopped
  • ¼ green pepper chopped
  • 2 slices thick cut ham diced into cubes
  • 3 eggs
  • ¼ cup milk
  • tsp garlic
  • tsp onion powder
  • tsp paprika
  • ¼ tsp dried parsley
  • ¼ tsp pepper
  • tsp salt
  • ¼ cup white cheddar cheese grated

Instructions

  • Preheat oven to 375°
  • Heat butter in a small 8 inch cast iron skillet, add onions and peppers and cook over medium heat until softened – about 5 minutes.
  • Remove onions and peppers from pan and transfer to a plate to cool slightly.
  • In same pan, add chopped ham and cook 2 – 3 minutes, allowing the edges of the ham to brown just slightly.
  • In the meantime, whisk eggs, milk, and spices in a bowl. Add in peppers and onions, ham, and most of the cheese (reserving a little for sprinkling on the top) and stir to combine.
  • Pour egg mixture in to hot cast iron skillet and top with reserved cheese.
  • Bake in preheated oven for 15 – 18 minutes, until eggs are just set.

Notes

- This recipe works best in a well seasoned cast iron skillet (as the seasoning will make it be nonstick). If you are using a dish or skillet other than cast iron, you may want to butter or spray the pan with nonstick spray before adding the eggs to help it not stick.
- If scaling the recipe up, use 6 eggs for a 10 inch skillet.

  1. I make a vegetable frittata regularly. I roast red onions, red pepper, courgette, season well and add some oil, stir well and cook in a round ovenproof dish lined with non stick tinfoil for about 20 mns till soft.
    Whisk 3 large eggs with a little milk, pour over veggies and cook for another 10-15 mns till set. I turn the oven down to about 160 when the egg mixture goes in.
    You can add whatever veggies you like and add grated cheese if liked.

    This is my go to recipe for frittata – I just increase the ingredients to feed more people and use a bigger pan.
