Frittatas have become one of my favorite breakfast dishes. They are quick and easy to throw together with pretty much anything you have on hand. I love mixing together various veggies, meats, and cheeses to come up with a quick and filling breakfast. But they don’t stop there, frittatas are also great for a quick lunch or dinner as well. From classics like ham and cheese to broccoli and cheddar the combinations of frittata ingredients are limitless.

One downside to frittatas though is that they are usually meant to serve a crowd. That’s great if you have a big family, but if you are cooking for one or two, a giant 12 egg frittata can be a lot. That is where this Swiss, Caramelized Onion, and Sausage Frittata for Two comes in.

This recipe is inspired by my Ham and Cheese Frittata for Two that I whipped up one Easter morning, and has now become one of the most popular recipes on my blog. It is a scaled down version of a larger frittata, made in a small 8 inch oven-proof skillet. But this Swiss, Caramelized Onion, and Sausage Frittata switches it up with sweet and savory caramelized onions that just melt into the egg, hearty bits of crumbled breakfast sausage, and sharp, melty Swiss cheese.

When developing this Swiss, Caramelized Onion, and Sausage Frittata for Two, my inspiration definitely came from my love for caramelized onions. The frittata has somewhat French onion soup vibes with the combination of sweet, melty caramelized onions and nutty, buttery Swiss cheese melted over the top. If I had to pick a favorite flavor combination, deeply caramelized onions paired with gooey melty cheese, would definitely be near the top of the list.

A Versatile Frittata Recipe for Two

One of the best parts of this Sausage Frittata for Two is that the recipe is totally flexible, so you can mix it up depending on your tastes. For example, don’t like Swiss cheese, substitute your favorite melty cheese. Looking for a meatless or vegetarian frittata recipe, skip the sausage and add extra veggies like mushrooms, and spinach or kale.

  • Sub bacon for the sausage, because bacon and caramelized onions are the perfect salty, sweet combination
  • Substitute a chicken or even plant based sausage for reduced fat and calories
  • Add some sliced mushrooms when the caramelized onions are about halfway through cooking – I totally would have added this if I could get Steve to touch mushrooms!
  • Add spinach or kale for an extra nutrient boost and that grassy flavor
  • Swap the Swiss cheese for white cheddar, Monterey jack, gruyere, or provolone

This sausage frittata recipe for two is perfect for a quick and easy breakfast, lunch, or dinner. You can pair it with a big salad for an easy dinner. Or serve it with some fresh sliced fruit for a filling breakfast or brunch. (Of course, bring on the mimosa as well!) You can even slice up any leftovers and add them on a breakfast sandwich the next day with a toasted English muffin, extra cheese, and a tomato slice for a quick weekday breakfast.

Swiss, Caramelized Onion, and Sausage Frittata for Two

Ingredients

  • ¼ lb mild breakfast sausage
  • 1 yellow onion
  • 1 tbs butter
  • 5 eggs
  • ¼ c milk
  • tsp garlic powder
  • tsp onion power
  • ¼ tsp dried thyme
  • ¼ tsp pepper
  • ¼ tsp salt
  • ½ c Swiss cheese (grated)

Instructions

  • Preheat oven to 375°
  • In an 8 inch cast iron (or other ovenproof skillet), cook sausage over medium heat until brown (about 5 minutes)
  • While the sausage cooks, slice one onion in half, then thinly slice into half rounds
  • Remove sausage from skillet, set aside, and drain the grease. In same skillet, reduce heat to medium-low and melt butter.
  • Add onions, cover, and cook 15 minutes (stirring every 5 minutes or so to make sure they aren’t burning).
  • Uncover onions, and continue to cook 5 – 10 more minutes until the onions are soft and caramelized.
  • Whisk eggs, milk, and spices until well combined. Add sausage, caramelized onions, and half of the shredded Swiss. Pour mixture into same warm skillet, top with remaining cheese.
  • Bake uncovered for 15 – 18 minutes, until eggs are set and cheese is melted.

Notes

This recipe works best in a well seasoned cast iron skillet (as the seasoning will make it be nonstick). If you are using a dish or skillet other than cast iron, you may want to butter or spray the pan with nonstick spray before adding the eggs to help it not stick.
