One of my favorite parts of summer is growing fresh herbs! I love being able to run out to my backyard and grab a quick handful of herbs to spruce up any recipe. Fresh herbs add so much flavor as well as add a healthy boost of phytonutrients to all types of dishes.

My inspiration for this recipe was a quick breakfast frittata that I whipped up one early summer morning several years ago when my garden was just starting to fill with fresh herbs. It was absolute perfection!

This Potato Crusted Herb and Goat Cheese Frittata boasts subtle flavors with thinly sliced yellow potatoes, fluffy eggs, tender sautéed shallots, and dollops of tangy goat cheese that compliment and truly let the bold herbaceous flavors shine. I choose to incorporate chopped chives and basil – two of my favorite summer herbs – to bring a bold punch of flavor to this frittata. Every bite is layered with fresh herb flavor, including bright chives, sweet basil, and a touch of earthiness from the shallots.

Using fresh herbs brings so much bright flavor to this frittata – it can’t be beat. If you don’t have fresh herbs, you can substitute freeze dried herbs. But I don’t recommend using traditional dried herbs, as they don’t bring nearly as much bold flavor. Read more about recipe substitution recommendations and ideas below.

Herby Frittata Recipe Substitutions

This frittata recipe can easily be customized to your preference:

  • Try Different Herb Combinations: You can experiment with different herbs depending on what you have growing or available. For example, swap in some dill, thyme, or even parsley as a substitute for or in addition to the basil and chives.
  • Swap Freeze Dried Herbs: If you are making this Herb and Goat Cheese Frittata during winter or when fresh herbs aren’t at their peak, try swapping in freeze dried herbs instead. Keep in mind that freeze dried herbs have a more concentrated flavor, so you should reduce the amount by 1/3. I don’t recommend using traditional dried herbs here, since the flavor isn’t as fresh.
  • Mix up the Cheeses: If you aren’t a fan of goat cheese, or just want to try something different, you can try this recipe with all kinds of different cheeses. This Potato and Herb Frittata would be perfect topped with shredded parmesan, white cheddar, or swiss. Or add in chunks of feta, for a salty, creamy bite. You can even dollop with dots of cottage cheese that will melt in beautifully and add an extra boost of protein.

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 shallot (minced)
  • 1 tbsp butter
  • 3 medium yellow potatoes
  • 8 eggs
  • ½ cup milk
  • 3 tbsp fresh basil (chopped)
  • 3 tbsp fresh chives (chopped)
  • ¼ tsp onion powder
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • 4 oz goat cheese (garlic herb or plain)

Instructions

  • Preheat oven to 375°
  • Using a mandolin slicer or sharp knife, thinly slice potatoes into even rounds (about ⅛ inch thin).
  • In a 10 inch cast iron skillet (or other ovenproof skillet), heat oil over medium heat. Add in minced shallot and sauté 3 minutes until softened. Remove from pan and set aside.
  • Add butter to pan and increase heat to medium-high. When butter is melted and coats bottom of the pan, layer in potatoes - distributing in an even layer around the bottom of the pan. Cook without stirring 8 - 10 minutes, until potatoes begin to turn golden and form a slight crispy crust on the bottom layer.
  • Meanwhile, in a large bowl, whisk eggs, milk, onion powder, salt, and pepper, Basil, and Chives. Add in sautéed shallots and stir to combine.
  • Slowly pour egg mixture into pan over potato layer (using care not to disturb the layered potatoes), and crumble goat cheese over top.
  • Transfer skillet to oven, and bake 22 - 24 minutes until eggs are set.
  • Sprinkle with additional fresh herbs just before serving for an extra boost of flavor if desired.
