With just 5 ingredients, this easy Pineapple Margarita Pitcher recipe is super quick and simple to whip up, perfect for your Cinco de Mayo celebration or a warm, sunny summer afternoon. Sweet pineapple juice is balanced out with fresh squeezed tart lime, silver tequila, and triple sec served over ice with a spicy and tangy Tajin coated rim and just a splash of sparking water – because we could all use a little extra sparkle in our lives.
Is it ever to early to start thinking about Cinco de Mayo recipes? I don’t think so. In fact, it’s only April and I am already a couple of new recipes in. Now the toughest decision will just be narrowing it down to our favorite recipes to whip up. I’m definitely thinking these Grilled Chili Lime Shrimp Tacos with Pineapple and Poblano Salsa or these Quick Pulled Pork Carnitas Tacos. Or maybe we’ll just have tacos and tequila for a week straight at the beginning of this May. Tacos and tequila are my favorite, so I am totally in for that! Who wants to come over and find and excuse to celebrate with me?
But for now, back to the Pineapple Margaritas. This Easy Pineapple Margarita Picture recipe really is almost as easy as it gets. You just mix up some tequila, triple sec or orange liquor, fresh squeezed lime juice (you could use lime from a bottle, but fresh just adds the extra brightness these margaritas need), and pineapple juice in a large pitcher. Stir, and serve over ice (crushed is the best!) in a glass with a Tajin coated rim. Finally, top it off with just a splash of orange or lime sparkling water. The bubbles brighten up the drink, and help cut through some of the sweetness of the pineapple juice, for just the right balance.
What is Tajin?
Tajin is a Mexican spice blend, consisting mostly of chili peppers, lime, and sea salt. It is slightly spicy (but really not nearly as spicy as you would think), tangy, and a little salty. From what I understand Tajin is super popular in Mexico, where they usually sprinkle it over sweet fruits, like mango, watermelon, pineapple, or paypa. The spicy, tartness is a great complement to sweet fruits. It is also good sprinkled over vegetables. I love it with fresh cucumber slices or even sprinkled on grilled corn.
But my absolute favorite way to use Tajin is to rim cocktails. It adds a little punch to margaritas or brightens up a classic Bloody Mary or Bloody Maria. With Tajin being a popular pairing with fresh fruit, it is no surprise that it is the perfect complement to add a little spice and tang to these Pineapple Margaritas. The Tajin coated rim is optional of course, and this Pineapple Margrita Pitcher recipe would be great without it, but I definitely recommend you give it a try.
You can find Tajin in most grocery stores in the Mexican foods section. In fact, they even have it at my local Adli.
