Several months ago, I bought a couple of big bags of frozen raspberries. I think I probably needed them to make sangria for one of what Steve and I like to call our “Sangria Sundays” (check out, my favorite sparkling peach sangria recipe). But I was amazed at the delicious, tangy and bold flavor the raspberries added to the mix. Little by little, the frozen gems have been finding their way in to more and more of my cocktails (or mostly just glasses of white wine if we are being honest). And the convenience of frozen raspberries can’t be beat – especially since it always seems like fresh raspberries go bad before I remember to use them all.

Wanting to doctor up just the classic combination of raspberries and champagne, my inspiration for this recipe came from a recipe I saw on Food Network a while back where one of the hosts, probably Chef Geoffrey Zakarian, infused liquor with some type of herbal tea bags. I have made several fruit infused vodkas, but the idea to combine fruity herbal tea and vodka had never crossed my mind.

If you aren’t the biggest fan of tea, don’t worry, this Raspberry Lemon Champagne Cocktail doesn’t have an overwhelming taste of tea – just a light fruity deliciousness. Steve doesn’t ever drink tea, and he enjoyed this cocktail.

How Do I Make Tea Infused Vodka?

For this tea infused vodka, I used a couple of my favorite go to herbal teas. Just toss one Lemon Zinger tea bag with one Lemon Ginger tea bag in an empty mason jar or glass dish and pour the vodka over. I love the subtle ginger flavor the vodka gets from the Lemon Ginger tea, but if you don’t have it, you can just use two Lemon Zinger bags instead.

After just a couple of hours in the fridge, the vodka has the most beautiful pink color thanks to the Lemon Zinger tea. Just look at that color!

How Do I Make Raspberry Simple Syrup?

While it sounds intimidating, the raspberry simple syrup really is simple to make. Just combine equal parts water and sugar with frozen raspberries. Bring to a boil and stir until sugar is just dissolved. Then remove from heat and cool in a sealed jar until ready to use.

Topped off with bubbly champagne, this Raspberry Lemon Champagne Cocktail is perfect for any celebration. Steve and I mixed these up on Valentine’s Day to go with our homemade sushi. We even rimmed the glasses with Pop Rocks for a little extra sparkle! The bubbles and the bright pink color were just perfect for Valentine ’s Day.

Then again, if you know me, you know I don’t need a reason for champagne, so I would honestly say this champagne cocktail with tea infused vodka is a perfect treat anytime!

Can I Double This Raspberry Lemon Champagne Cocktail Recipe for a Party?

The amount of simple syrup and vodka in the recipe makes about enough for about 8 cocktails, but if you are serving a crowd feel free to double or triple it. And if you don’t use it all at once, the raspberry lemon tea infused vodka and raspberry simple syrup should each keep for about a week in the fridge.

Ingredients

Raspberry Simple Syrup:

  • 1 cup water
  • 1 cup sugar
  • 1/4 cup frozen raspberries

Raspberry Lemon Tea Infused Vodka

  • 1 cup vodka
  • 1 lemon zinger tea bag
  • 1 lemon ginger tea bag

Drink

  • 1 oz vodka
  • 1 oz raspberry simple syrup
  • 1 lemon wedge
  • champagne
  • Pop Rocks to rim glass (optional)

Instructions

To Make the Raspberry Simple Syrup:

  • Add water, sugar, and raspberries to a small sauce pan.
  • Heat over medium heat until liquid just begins to bubble and sugar is dissolved, stirring to mash up berries.
  • Remove from heat and pour through a fine mesh strainer.
  • Store refrigerated in an airtight container until ready to use.

To Make the Raspberry Lemon Tea Infused Vodka:

  • Combine vodka and tea bags in a glass jar or dish. Cover and refrigerate at least 2 hours.

To Make the Cocktail:

  • If desired, prepare the glass by running a wedge of lemon over the rim and dipping rim into Pop Rocks to stick.
  • Measure vodka and simple syrup into a shaker over ice. Squeeze in one lemon wedge. Shake and pour into glass.
  • Top with chilled champagne to fill the glass (or to taste).
