Ham and Cheese Frittata for Two

This mini Ham and Cheese Frittata for Two is loaded up with chopped ham, sautéed onions and peppers, and melty white cheddar cheese, making it a perfect easy brunch dish for two.

Ingredients

  • 1 tbs butter
  • ¼ red onion diced
  • ¼ red bell pepper chopped
  • ¼ green pepper chopped
  • 2 slices thick cut ham diced into cubes
  • 3 eggs
  • ¼ cup milk
  • tsp garlic
  • tsp onion powder
  • tsp paprika
  • ¼ tsp dried parsley
  • ¼ tsp pepper
  • tsp salt
  • ¼ cup white cheddar cheese grated

Instructions

  • Preheat oven to 375°
  • Heat butter in a small 8 inch cast iron skillet, add onions and peppers and cook over medium heat until softened – about 5 minutes.
  • Remove onions and peppers from pan and transfer to a plate to cool slightly.
  • In same pan, add chopped ham and cook 2 – 3 minutes, allowing the edges of the ham to brown just slightly.
  • In the meantime, whisk eggs, milk, and spices in a bowl. Add in peppers and onions, ham, and most of the cheese (reserving a little for sprinkling on the top) and stir to combine.
  • Pour egg mixture in to hot cast iron skillet and top with reserved cheese.
  • Bake in preheated oven for 15 – 18 minutes, until eggs are just set.

Notes

- This recipe works best in a well seasoned cast iron skillet (as the seasoning will make it be nonstick). If you are using a dish or skillet other than cast iron, you may want to butter or spray the pan with nonstick spray before adding the eggs to help it not stick.
- If scaling the recipe up, use 6 eggs for a 10 inch skillet.
