This Easter Chex Mix is seriously delicious! To quote Steve, “This is the tastiest thing I have had in a long time!” and he is absolutely correct. When I first made it, Steve and I kept making excuses to walk back through the kitchen to grab another handful. In fact, I may have had to hide the dish in the car to keep him from eating all of the Chex Mix that I was planning to bring to a party later that afternoon. If you are a fan of white chocolate covered pretzels or anything with that sweet and salty combination, I guarantee you will not be able to get enough of it.

Also, called Bunny Bait, this spring chex mix is perfect for Easter, but with it’s colorful rainbow marshmallows, sprinkles, and M&Ms, it would really fit in at any spring celebration. It is the perfect addition to your Easter basket (imagine this as a surprise inside little plastic eggs – absolute heaven!). It would also make an amazing snack for your St. Patrick’s Day party or even a fun and festive movie night snack. With a rainbow of pastel spring colors and a combination of crunchy, sweet, and salty this Easter Chex mix is a treat that adults and kids are sure to love.

How Do I Make Easter Chex Mix?

This Easter Chex Mix is easy and quick to make, so you will definitely want to make some up today. You just add some pretzels, chex, and Lucky Charms to a big bowl. Melt the white chocolate or almond bark, and stir in a pinch of salt. Pour the white chocolate over the cereal/pretzel mixture and stir to coat. The mixture should have a thin even coating. Add your sprinkles and stir again (you don’t want these to get lost in the white chocolate if you add them too early). Spread it out on a baking sheet to set up. After the chocolate hardens, break up any large chunks, and add in your M&Ms.

To make it you will need:

  • Pretzels: I love the pretzel sticks (they just have the perfect salty crunch), but you can also substitute mini pretzels if you prefer.
  • Rice Chex: A classic in any spring chex mix, these little squares gather up lots of tasty white chocolate coating.
  • Lucky Charms: An extra fun addition, I love the addition of Lucky Charms cereal for extra sweetness and crunch. Just keep the marshmallows in, no need to sort them out.
  • White Chocolate/Almond Bark: I like to use vanilla almond bark, because it melts up so beautifully smooth. But you can also use white chocolate chips or a good quality white chocolate bar.
  • Sea Salt: White chocolate can be super sweet, so just a pinch of salt balances out the sweetness.
  • Easter or Spring Sprinkles: These are optional, but adding fun sprinkles adds a little extra color and crunch.
  • M&Ms: Toss in your favorite M&Ms at the end. I used pastel peanut M&Ms to make this Spring Chex Mix, but you could also use regular M&Ms, peanut butter M&Ms, or even those tiny candy coated chocolate eggs. You could even substitute chocolate covered almonds (my mom’s favorite), they may not be as pretty, but they will taste delicious.

Ingredients

  • 2 cups pretzel sticks
  • 2 cups rice chex
  • 2 1/2 cup lucky charms cereal (marshmallows included)
  • 12 oz vanilla almond bark or white chocolate chips
  • 1/8 tsp sea salt
  • 2 tbsp sprinkles (of your favorite type and color)
  • 1 cup M&Ms

Instructions

  • Add pretzels, Chex, and Lucky Charms to a big bowl.
  • Melt the white chocolate or almond bark, and stir in a pinch of salt. Pour the white chocolate over the cereal/pretzel mixture and stir to coat.
  • Add your sprinkles and stir again (you don't want these to get lost in the white chocolate if you add them too early).
  • Spread mixture out on a parchment lined baking sheet until cooled and chocolate has hardened.
  • Break up any large chunks, and add in your M&Ms.

Notes

Store at room temperature or keep refrigerated for an extra special treat.
