Maple Mustard Pork Tenderloin with Apples, Sweet Potatoes, and Thyme

- 1 1/3 lb pork tenderloin
- salt and pepper
- lemon pepper
- garlic powder
- 1/2 lb sweet potatoes, about 1 large sweet potato or 2 medium (cut into 1/2 inch chunks)
- 1/2 lb new potatoes (cut into 1/2 inch chunks)
- 1 small onion (sliced)
- 2 apples, honeycrisp or gala (sliced)
- 1 clove garlic (minced)
- 1 tbsp fresh thyme
Maple Mustard Sauce
- 4 tbsp pure maple syrup
- 2 tbsp whole grain mustard
- 1 tbsp spicy brown mustard
- 2 tsp apple cider vinegar
Preheat oven to 400°
Season pork tenderloin with salt, pepper, garlic powder, and lemon pepper seasoning
In a large, oven proof skillet, add 1 tbsp olive oil. Sear pork over medium heat for 3 - 4 minutes per side, until lightly browned
Add sweet potatoes, potatoes, onion, apple, garlic, and thyme. Season vegetables with additional salt and pepper and drizzle with remaining 1 tbsp oil. Stir to coat evenly.
Transfer skillet to preheated oven, and bake 10 minutes
Spoon about half of the sauce over the pork and spread the rest around the apples and vegetables, stir to coat. Continue to bake until pork is cooked through to a temperature of 145° and vegetables are tender, about 15 - 20 additional minutes.
Rest the pork about 5 minutes, and slice to serve. Spoon any addition pan juices over pork when serving.
