To make dressing, add all ingredients to a food processor or blender. Plus until combined.
In a large bowl, add kale and squeeze over 1/2 lime. Gently squeeze kale between fingers, massaging until kale is tender and a bright green.
To kale add chopped mango, avocado, corn, sliced radishes, and sunflower seeds. Pour dressing over salad and toss to coat (you may not need all of the dressing).
Notes
For vegan, substitute maple syrup or agave syrup for the honey.
