- 2 tbsp butter
- 1 yellow onion
- 2 cloves garlic (minced)
- 1/2 tbsp fresh thyme
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- 2 tbsp flour
- 1 cup beef bone broth (divided)
- 1 1/2 cup milk
- 1 1/2 cup shredded cooked chicken
- 14 oz frozen cheese ravioli
- 1/2 cup mozzarella cheese (shredded)
- 1/2 cup swiss cheese (shredded)
Preheat oven to 400°
Thinly slice onions into half moons.
Melt butter in oven-safe skillet over medium heat, add onions, cover, and cook 15 minutes (stirring every 5 minutes or so to make sure they aren’t burning).
Uncover onions, and continue to cook 5 – 10 more minutes until the onions are soft and caramelized.
Add thyme, garlic, salt, and pepper and stir in 1/4 cup broth. Sprinkle flour over onions, stir to combine, and cook about 1 minute.
Stir in remaining broth and milk and cook an additional 3 - 4 minutes, until the sauce just begins to thicken. (It will thicken more in the oven.)
Stir in cooked chicken and frozen ravioli. Spread ravioli in an even layer, and top with cheese.
Transfer skillet to oven, and bake uncovered in middle of oven for 20 minutes. Cover with a lid near the end of cooking time, if needed, to prevent cheese from burning.
