Ingredients

  • 2 tbsp butter
  • 1 yellow onion
  • 2 cloves garlic (minced)
  • 1/2 tbsp fresh thyme
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 2 tbsp flour
  • 1 cup beef bone broth (divided)
  • 1 1/2 cup milk
  • 1 1/2 cup shredded cooked chicken
  • 14 oz frozen cheese ravioli
  • 1/2 cup mozzarella cheese (shredded)
  • 1/2 cup swiss cheese (shredded)

Instructions

  • Preheat oven to 400°
  • Thinly slice onions into half moons.
  • Melt butter in oven-safe skillet over medium heat, add onions, cover, and cook 15 minutes (stirring every 5 minutes or so to make sure they aren’t burning).
  • Uncover onions, and continue to cook 5 – 10 more minutes until the onions are soft and caramelized.
  • Add thyme, garlic, salt, and pepper and stir in 1/4 cup broth. Sprinkle flour over onions, stir to combine, and cook about 1 minute.
  • Stir in remaining broth and milk and cook an additional 3 - 4 minutes, until the sauce just begins to thicken. (It will thicken more in the oven.)
  • Stir in cooked chicken and frozen ravioli. Spread ravioli in an even layer, and top with cheese.
  • Transfer skillet to oven, and bake uncovered in middle of oven for 20 minutes. Cover with a lid near the end of cooking time, if needed, to prevent cheese from burning.
